You can turn incognito on only before you send the first message. Once the conversation has started, the setting is locked — the AI has already seen what it has seen, and there is no way to retroactively undo that. To chat privately now, start a new conversation with incognito on from the beginning.
Messages in an incognito chat still count toward your monthly chat quota.
